Creole Potato Salad
Serves 6 to 8

  • 6 medium Idaho potatoes
  • 4 hard boiled eggs, peeled, yolks and white separated
  • ½ cup chopped celery, chopped
  • 1 teaspoon chopped fresh parsley
  • ½ cup chopped green onions, optional
  • 1 30-ounce jar Miracle Whip Salad Dressing
  • 1 8-ounce jar sweet pickle relish
  • 2 teaspoons yellow mustard
  • 1 teaspoon sugar
  • salt, pepper, and Creole seasoning

Boil potatoes with skins on until tender, about 20 minutes. Drain and peel potatoes. Place in a large mixing bowl; mash roughly against sides of bowl. Add egg white to mashed potatoes; mash to break up. Add celery, parsley, green onion, salt, pepper, and Creole seasoning. Stir to combine. Add Miracle Whip; blend thoroughly. Set aside.

Add egg yolks to a separate bowl. Add relish and mustard; blend thoroughly. Fold the relish mixture into the potato mixture. Correct seasoning with salt, pepper, Creole seasoning, and sugar, if desired.
