Chefs will prepare one dish for the competition, using fresh, sustainable seafood from their state.
The event is part of the Louisiana Foodservice Expo at the Convention Center, which isn't open to the public, but the Great American Seafood Cook-Off, however, is open to the public. Admission is taken as a $5 donation to the Louisiana Restaurant Association's Education Fund.
